Menu Plan Monday: February 2

It was like pulling teeth to figure out the menu plan for this week.  I have a feeling that we won’t stick to this plan but we’ll see.  It will be a crazy week as we are going to try and take a few evening spin classes which will put us home later than normal and we have taxes to do.

Join us for Menu Plan Monday

Monday-
Turkey burgers, potato fries and veggies

Tuesday-
Breakfast for Dinner (Waffles or Pancakes)

Wednesday-
Fish (Mahi Mahi/Salmon), potato, veggies

Thursday-
Tax night so we’ll probably order in or go out for an early dinner

Friday-
Crockpot Chicken (not sure how it will be seasoned yet but I’m thinking Jamaican Jerk)

    my brain is dead at the moment for meal plans :) I know bbq ribs are on the menu one day :) but that’s as far as it goes! I want a chef………I think I am entering into cooking burnout!

    Menu planning is one of my favorite things to do!

    I am doing chicken asian lettuce wraps, egg rolls and fried rice.

    Chicago-style Italian roast beef, garlic mashed potatoes and green beans almandine

    Chicken brunwick stew and grilled cheese sammies

    Cheesy beef sandwiches from the left over roast beef with oven fries

    Homemade Pizza, of course! I am thinking of doing buffalo chicken pizza this week.

    Just read your comment on MetropolitanMama’s site where you mentioned loving jerk seasonings. Just wanted to share this recipe which I totally love. It is so yummy- we usually grill chicken quarters like this, but you could use any type of chicken. -Kimberly
    Simple Caribbean Jerk Chicken
    Recipe #33170 | 1¾ hours | 1¼ hours prep |

    I like jerk chicken but often don’t have all the exotic ingredients. This simplifies the mix by using dry italian dressing. Yummy on the Grill!
    SERVES 6 (change servings and units)

    Ingredients
    1 envelope Italian salad dressing mix
    2 tablespoons brown sugar
    2 tablespoons oil
    2 tablespoons soy sauce
    1 teaspoon cinnamon
    1 teaspoon thyme
    1/2 teaspoon ground red pepper
    2 1/2 lbs chicken pieces
    Directions
    1Mix all ingredients except chicken in bowl.
    2Pour over chicken.
    3Cover and marinate 1 hour or over night in fridge.
    4GRILL it!
    5Enjoy!

    I see quite a few of us like breakfast for dinner. I’m excited about tonight LOL

    Miz: I have not tried making protein pancakes before. We just bought a multi grain mix but I was using a buckwheat one before (and hubs had the regular).

    Kimberly: Thank you very much for the jerk seasoning recipe. We will definitely have to try that.

    Biz: Your menu sounds divine especially the chicken asian lettuce wraps.

    Annette: BBQ ribs sound good! A chef sounds like a good plan.

    I just sent my husband to the grocery store with a list. A few of the meals on my menu for this week include: Chicken Tortilla Soup, Grilled Salmon with steamed veggies on the side, and Belgian Waffles topped with strawberries and bananas.
