A Personally Challenging Week

The last few months have just been a bit challenging on a personal level. This past week was one of the hardest. Our kitty, Franklin shattered his leg 10 weeks ago (and has been in a dog crate ever since) and had his 2nd surgery on Tuesday to get the pin out. It was to be his final surgery and he would be good to go.  We were so excited that day. However two days later he cracked that same leg.

I’m most excited because the meals are simple for someone who doesn’t cook. That would be me!  I have been cooking a bit lately and so far so good.

I only started planning our meals a few weeks ago and haven’t been too sure about planning meals out in advance.  Probably because I have to come up with the meals every week. That’s what I like about Jedha’s e-book product, she has it all laid out for you.  My kind of meal plan!

No Naughty Desserts May

I have a goal in May to skip the ‘naughty’ desserts. By naughty I mean junk I would normally choose like ice cream and processed cookies.

I’m going to try to cut down on dessert after dinner altogether but if I do have anything it will be something more healthy like fruity frozen ‘ice cream’, homemade granola bars, fruit, etc.

I will have homemade type goodies like banana bread, chocolate/peanut butter oat balls/bites, etc. BUT those will not be eaten in the evening and will be very limited.
