48 Days To A Better Me

It’s fitting that the 48 Days To a Better Me starts today AND it’s Feb. 14th, Valentine’s Day.  I went over and over various things that I could do but decided on just two thing that will help improve my life in the next 48 days.  I shared these two goals on the 48 Days To a Better Me podcast where you can also here a bit about my story and how I have improved my life over  the last 6 years.  Learn about my #1 obstacle, why I don’t focus on the scale and the thing that has changed the most with me over the last six years.  I had a great chat with Kelly and Tishia.

Oh The Feeling Of Defeat

Challenge: Wave
Feeling a bit defeated lately.  My food choices have not been the greatest and I haven’t been enjoying my workouts so I have not done as much as normal.  As I have mentioned before, there have been some issues at the gym and we are looking to move to a new one.  The only thing that stinks is that I have to hang around the old one until my personal training contract is up or I have to pay 50% to get out of it (and it’s dragging me down!). Don’t get me wrong, I really like my trainer but I just want to get back into a workout groove.  It’s times like these that I dream of having a home gym and not be part of the gym drama.  The ultimate thing would be to set up our garage as a home gym and find spin/cycle classes that we can pay to go to a few times a week.  We are out in the NW burbs (Chicago) so I have not had any luck finding places that just offer spin classes.  Everyone says we should open our own but can you imagine the cost of that especially when it comes to insurance? HA!

Laughter Is The Best Medicine

Came across an article, Laughter: Good For Your Health and I totally agree that laughter is the best medicine.  A day doesn’t go by that Kev and I don’t laugh.  You must live life to the fullest because you do not know what tomorrow will bring.  Seriously!  I know they say that researchers don’t know if it’s the act of laughing that is proven to have health benefits but it sure doesn’t hurt.  I know I always feel good after a good laugh and sometimes we laugh so hard it’s just like a workout LOL

Winter Vegetable Enchiladas

Carrots, Tomatoes, Lettuce, Garlic, and Broccoli

Winter Vegetable Enchiladas

serves 4

  • 1 large acorn squash
  • 2 large carrots, cut into 1/2-inch slices
  • 12 Brussels sprouts, thinly sliced lengthwise and separated into shreds
  • 2 tablespoons chili powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon cayenne
  • 8 (8-inch) reduced-fat whole wheat tortillas
  • 1/2 cup shredded reduced-fat Cheddar cheese
  • 1 cup enchilada sauce

1    Preheat oven to 400°F.

2    Cut squash lengthwise into quarters; scoop out seeds. With vegetable peeler, peel skin from ridges. Put squash and carrots in large baking dish; lightly spray with nonstick spray. Roast, stirring once or twice, until lightly browned and tender, about 40 minutes.

3    Reduce oven temperature to 350°F.
