I came across some awesome recipes this week and had some saved on my Pinterest healthy foods/recipe board. Thought I would share a few with you.

Plus I keep adding new vegan and vegetarian cook books to my wish list.  I’ll probably do some online shopping tonight.

Positive Thoughts

Workouts this week were good!

As you know, during the Best Body Bootcamp, we have to pick two goals each week.  My goal to eat dinner at home has stayed the same for the first few weeks of Best Body Bootcamp but I changed up the 2nd goal.

For the first 2 weeks I had a goal to be in bed by 11 PM and I accomplished that most nights.  For the next few months it might not be something I can do so I’m changing it up.

Quinoa Burgers: Pizza Style

We made one of the best meals we have had in a long time.  It was so tasty we are still talking about it days later.  We made quinoa burgers, pizza style.  So it’s not an actual patty but rather the quinoa served up in the size of one without a top to the sandwich.

I am not the best at photos so don’t hold that against me. One day I’ll figure out how to take good photos but the taste will totally make up for it. I promise!

About Quinoa: Benefits and More

In honor of National Nutrition month, I wanted to talk about quinoa: benefits, what it is, how to make it, etc.  I will tell you that I was not too fond of it when I had it in the past however we made a recipe with it the other night and I absolutely loved it.

I’m excited to use quinoa more! Gotta stock up.

And I just found out that quinoa is grain of the month for March.  Perfect timing.  And in case you are wondering, it’s pronounced KEEN-WAH.

Week 2 Best Body Bootcamp & Personal Training

This is week 2 of Best Body Bootcamp & my personal training with Tina of Best Body Fitness.  Totally loving it so far.

I am so glad that I decided to grab her 8 week plan because I was kind of stumbling and not really sure which way to go with workouts. They were getting old and boring and when it came to strength workouts, I know I needed to add them in on a consistent basis.

But my eyes glazed over when I saw different strength training workouts and I was never sure which workouts would be best for me.  I am excited to do these workouts and try to do better every time.
