Life Has Been Crazy Busy

Crazy busyI am finally home from traveling and feeling better too. Thank goodness.

This week consisted of a lot of hubby time, catching up on sleep and even some cooking.  We had a beautiful Valentine’s Day dinner at our favorite sushi restaurant, Sushi Thai II in Vernon Hills, IL.

This weekend was grocery shopping, juicing and I made a white bean hummus. It turned out delicious.  I can’t wait to have it with lunch tomorrow on toast with slices of tomato.  Ahhhh doesn’t that sound good?

Coney Lentil Pie with Asiago Polenta

Coney Lentil Pie & Asiago PolentaHad a hard time trying to figure out what to call this meal.  Went from BBQ to coney sauce and Shephard’s pie to lentil pie.  So we came up with Coney Lentil Pie.  That should work.

I was craving lentils, we needed to use up some veggies, the polenta and we felt like biscuits.  So I came up with the idea of a shephard’s pie like meal except no potatoes and not as many veggies.

We’ll call it the Coney Lentil Pie with Asisago Polenta. I’m sorry we don’t have exact measurements, hubby doesn’t roll that way.  And I have to say I am impressed that I came up with an idea without a recipe.

Outdoor Meal Plan

This week I’m keeping my fingers crossed that the wind stays calm and that it doesn’t rain so we can enjoy dinner out on our newly decorated deck space. I’m very excited about this new outdoor oasis we are putting together.  I ordered some LED solar lights, an wireless outdoor stereo system and we are going to be making outdoor curtains from canvas drop cloths.

It will be such a fun experience to enjoy our meals outdoors.  I just wish we lived somewhere it’s warm year round!  Here’s the tentative menu plan for this week.

Grilled Corn on the Cob

If you haven’t tried vegetables on your grill, you are really missing out.  Grilled corn on the cob is my all-time favorite.  My Secrets of Grilling Corn on the Cob post is THE most popular post on Outdoor Cooking Magic.  Memorial Day is almost here and that traditionally kicks off the summer barbecue season and corn on the cob is usually available by then, so if you are grilling this Memorial Day, make sure that you are also grilling corn on the cob.   There are lots of ways to grill corn on the cob–I’m going to share two of my favorites.

Grilled Asparagus

Last week I talked about healthy grilling and how to grill salmon on a plank.  Grilled vegetables is another great way to grill healthier foods and grilled asparagus is ideal.   Today I’m going to tell you a super easy way to grill asparagus.

To begin with, you need to prepare your asparagus by snapping the woody part off near the bottom of each spear.  If you hold the asparagus at the end with one hand and an inch or two up from the bottom with the other and just bend, the stalk will naturally break in the right place.
