Motivational Monday & Menu Plan

Kev and I didn’t figure out our meal plan for the week so we are going to play it by ear. Some of the meals we’ll have include pasta with his homemade sauce, fish and probably gumbo one night.  Not quite sure what else.  We are swamped this week so we are just going to go with the flow.

Also, as you might have noticed, we have a very special guest Monday and Tuesday this week.  Dr. Mommy started her Healthy for the Holiday’s blog tour here on my blog.  I’m so excited for you all to get to know Daisy better. There are giveaways and I’m going to share with you in this post two yummy recipe ideas that Daisy sent along to share with my readers.  Keep reading below for the recipes.

I have been motivated by Daisy to keep going on my journey.  Last night I had a major melt down (lots of crying and lots of hubby hugs) because I have gained weight and inches and now I have to buy all new clothes and bathing suits for our trip to Jamaica.  I’m sick over this not only because I worked so hard to get to where I was but also because of all the money I have to spend for new clothes.  This blog tour couldn’t have happened at a better time to get me motivated to just keep going.  I cannot change the fact that I have to buy new clothes but I won’t be in them for long and then I can either try to sell or donate them.  Gotta think positive!

Enjoy these two healthy recipes that Daisy has been kind enough to share with us.

Banana Nut Oatie Balls

Perfect for little hands!

Ingredients:

1 banana

½ avocado

2 tsp honey (never give honey to a child under 1 year of age)

½ cup almonds, finely ground

½ cup rolled oats or can use granola

Directions:

Peel and mash the banana and avocado together.

Add the honey, almonds and oats to the mashed mixture and stir well.

Form the mixture into balls and refrigerate.

Yummy treats that are nutritious too!

Cauliflower Popcorn

Ingredients:

Cauliflower flowerets cut into bit-size pieces (3 cups)

2 tbs olive oil

¼ tsp pepper

2 tbs grated Parmesan cheese

Directions:

Toss the florets with the olive oil and pepper.

Roast uncovered in oven at 450 degrees for about 20 minutes or until browned

Sprinkle with grated Parmesan cheese and enjoy!

I actually wanted to quickly share that I did the first day of the Melt It Off program that I mentioned in yesterdays post and boy oh boy, my arms, legs and abs are a shakin’.  Phew!  I already know I’m going to LOVE this program!

Menu Plan Monday: October 19

It’s time for Menu Plan Monday!  I know it’s been quite some time since I have posted our Menu Plan (August to be exact) but I’ll try to get back into it.  This week our plan is to only use what we have on hand and no shopping for anything extra.  Plus Thursday I will have a tooth extraction so most likely will not be eating anything too exciting for a few days after that!

Monday-

Pork chops, homemade baked beans, veggie

Tuesday-

Shrimp & Crab Jambalaya with a mixture of leftover veggies thrown in (peas, corn, mixed veggies and edamame)

Wednesday-

Pasta with homemade sauce (ground turkey and veggies)

Thursday-

Up in the air

Up in the air

What is on your menu plan for the week?

P.S.  I’m in the process of learning what it takes to be a vegetarian and vegan.  I don’t know if either is for me for sure but I am sure willing to experiment.  I am looking for good books, websites, etc. that can give me the basics.  I know I can’t do this overnight but I would like to try to eat more whole healthy foods so that is my main goal.  I’ll write about this in a different post soon, I just wanted to see if I could get some feedback from those who might have been there, done that.

 

Menu Plan Monday: August 31

Time for Menu Plan Monday!  Not quite sure how this week will pan out but this is what we came up with so far.  It might change but since we didn’t have a chance to grocery shop this week, we’ll try to make do with what is already in the house.  We are going to try to hit up the Thursday Farmers Market though so maybe we’ll find some goodies there.
