Dinner Menu Plans for a Busy Week Ahead

This week is going to be crazy busy with client work and our kitten has his last surgery on Tuesday.  Who knows what the week will bring but here are the menu plans I have set up as of right now.

I do have a goal for May to not have any ‘naughty’ desserts after dinner.  By naughty I mean things like ice cream, cookies, etc.  There might be homemade goodies but I’m going to try for nothing processed.  It’s a big change but something I need to work on.

Goal is to make some fruity ‘ice cream’, have Greek yogurt/cereal mix, homemade granola bars and things like that.  I’ll have a blog post full of healthy dessert ideas that a lot of my online friends have shared with me this weekend.

Meal Plan Monday: Wish Me Luck

Last week’s meal plan didn’t go over as well as I thought but at least I’m trying to plan ahead.  We had maybe 2 meals from the list.

Sometimes you just don’t feel like having what was planned for that day. Do you ever have that problem?

Healthy Meal Plans For This Week

I’m going to try to start doing healthy meal plans again each week. We want to cut down on our dinners out AND as you have heard me say before, I want to start trying to cook some meals.

So I went through my new Cooking with Trader Joe’s Cookbook: Skinny Dish! and took a few recipes from there to try plus a meal from my friend Jedha’s Paleo meal plan program which I’ll be telling you more about very soon and came up with a bit of a plan.

I came across some awesome recipes this week and had some saved on my Pinterest healthy foods/recipe board. Thought I would share a few with you.

Plus I keep adding new vegan and vegetarian cook books to my wish list.  I’ll probably do some online shopping tonight.

Honey Crusted Baked Tofu Sticks

You will need:

  • Extra Firm Tofu
  • Honey
  • Panko bread crumbs
  • Black Pepper
  • Other spices of your choice
  1. Drain tofu (I wrapped tofu in towel for only a few minutes to get any excess liquid off).
  2. Line cookie sheet with tin foil and spray with olive oil.
